The Department of Hospitality Management, Lagos State University of Education (LASUED), on Wednesday, 8th July 2026, organised a Food Hygiene, Safety and Sanitation Certificate Training at the COMSED Board Room, Oto/Ijanikin Campus.

Declaring the programme open, the Vice-Chancellor of LASUED, Professor Bidemi Bilkis Lafiaji-Okuneye, emphasised the importance of the programme, noting that the University places high value on the wellbeing, safety, and security of its staff and students.

She commended the Department of Hospitality Management for organising the training and collaborating with relevant institutions to make the programme successful.

She also lauded the facilitators and participants for their commitment and excellent delivery despite their tight schedule, noting that the certificates to be presented were not just papers but a symbol of commitment towards promoting food hygiene, safety, and sanitation. Furthermore, the Vice-Chancellor encouraged participants to become ambassadors of proper hygiene practices and officially declared the programme open.

In her welcome address, the Dean, College of Management Sciences Education (COMSED), Professor Ajani Safurat Toyin, warmly welcomed participants and gave an overview of the training programme.

She explained that the programme was designed to improve participants’ understanding of food hygiene, safety, and sanitation while equipping them with the necessary skills required for proper food handling and preparation.

She assured participants that the training would be interactive and encouraged everyone to actively participate and make the event productive and memorable.

The first technical session was delivered by the Coordinator, Department of Hospitality and Tourism, Diploma Programme, Dr Dejo on “Understanding Food Hygiene and Safe Food Handling.”

The second technical session was delivered by Mrs Motunrayo Adewale Shomope on “Best Food Practices in Food Preparation and Institutional Catering.”

To complement the theoretical sessions, the Guest Speaker, Hajia Karimot Olabisi Salami conducted a practical demonstration on food hygiene procedures. She demonstrated proper handwashing techniques, food storage methods, kitchen cleaning and sanitation, and safe food handling practices.

Another lecture was delivered by the Director, Directorate of Medical Services, LASUED, Dr Ibrahim Sanusi on “Food Poisoning, Foodborne Diseases and Their Prevention.”

He explained that food poisoning and foodborne diseases are caused by consuming contaminated food and drinks. He discussed the causes, symptoms, and preventive measures, including proper hygiene, safe food storage, thorough cooking, clean water usage, and prevention of cross-contamination.

The next presentation was delivered by Professor Beatrice Ogannah-Ikujenyo of College Vocational Education (COVED) on “Nutrition, Food Preservation and Safe Food Practices at Home and Work.” She highlighted the importance of balanced nutrition and healthy eating habits.

She also discussed food preservation techniques such as refrigeration, freezing, drying, canning, and proper packaging to extend food shelf life and reduce waste.

The concluding training session was delivered by Mr Adelani on “Public Health, Environmental Sanitation and Food Safety Regulations.” He highlighted the importance of public health practices in maintaining a safe and healthy environment, particularly within the campus community.
